Chilli-rubbed pork with mango and basil salsa

Ingredients

  • 1tsp dried chilli flakes
    1tsp finely grated lemon zest, plus 2 tsp lemon juice
    4 x 220g thick pork steaks, trimmed
    2 ripe mangoes, peeled, stoned and cut into bite-size pieces
    25g fresh basil, leaves picked and roughly shredded
    1 small shallot, finely chopped
    2 tsp olive oil
    1 tsp red wine vinegar

Recipe

Combine the chilli and lemon zest with a good pinch of sea salt, then rub all over the pork. Heat a griddle or frying pan over a high heat.

When hot, add the pork then reduce the heat to medium. Cook for 4-5 minutes each side, until just cooked through. Transfer to a warm plate, cover loosely with foil and set aside to rest for 5 minutes. Meanwhile, make the salsa.

Put the mangoes, basil, shallots, oil, vinegar and lemon juice in a small bowl. Season and mix together. To serve, divide the pork between plates and top with the mango salsa.

Serve with boiled potatoes, if you like.
