

Heat the oven to Gas 8, 230C, 450F. Rub the joint all over with olive oil and seasoning. Heat a little olive oil in a roasting pan for 5 minutes then add the beef and cook the joint for 30 minutes.
Turn the heat to Gas 4, 180C, 350F and leave the door open for 5 minutes to speed the heat drop. If you like your beef rare, allow a further 10 minutes per 500g, for medium, another 15 minutes per 500g, for well done, another 20 minutes per 500g.
Remove the meat from the oven and leave to rest for 30 minutes in a warm place do not skip this, as it allows the meat to relax and become tender.
Pour any of the escaping beef juices into the gravy
